My (Developing) Cooking Skills

Happy March! Can’t believe we’ve been here for over a month already! Four months felt like a lot before I left, but now it feels much too short. Highlights so far have been exploring Ireland on my weekend trips and making new friends from around the world. Looking forward to celebrating St. Patricks Day in Ireland this month!

One thing I’ve learned about myself since I’ve been here is I actually really enjoy cooking. As some of you know, I was a little worried I would be eating a lot of cereal and sandwiches while here because there is no dining hall or meal plan at UL. However, that is not the case! So, I thought I’d share with you what I’ve been cooking up in our Kilmurray Village kitchen…

I made chicken tenders one of my first weeks here, which I’ve made a lot with my family. So, I at least had some idea what I was doing! It was quite a relief when they tasted good because while I was making them I was thinking it’d be a shame to do all of the work of making them just for them to not taste good.

I’ve since upgraded to sesame chicken and fried rice. Quite time consuming to make, but very worth it — this is probably one of my favorite meals I’ve made!

I said I wasn’t just eating sandwiches, but I still eat quite a few of them, just because they’re so easy. But, I now can make french fries to go with them!

This is up there as one of my favorite meals! They’re quesadillas with peppers, black beans, and corn. And of course you can’t forget the avocado on top!

More avocados because you can never have too many avocados! As I’m sure many of you are aware of my obsession with breakfast foods, I’ve cooked quite a few breakfasts at all times of the day šŸ™‚

This is a breakfast skillet that I went to the grocery store specifically to get the ingredients for because I was craving one. And some orange juice because who doesn’t want something sweet with their savory meal?!

My biggest endeavor thus far was cooking breakfast-for-dinner for the whole St. Thomas group here at UL! I made french toast bake, breakfast potatoes and a fruit salad. It took me basically the entire day to get the groceries and cook enough for almost twenty people. I had fun doing it though!

My arms were sore the next day from carrying all of those groceries back! The grocery store is just under a 15 minute walk, which isn’t bad…until you have a heavy bag of overflowing groceries that is. This is me giving my arms a little break šŸ˜‚
